I totally get this one. Chances are, if your garden has the right conditions to grow zucchini, you will be over-run by it. There used to be a lot of jokes going around suggesting ways to get rid of the excess. But, I never look for ways to get rid of mine. This is perhaps one of the most versatile vegetable you can grow in your backyard garden. It is good as the featured food in a multitude of preparations, as a side dish, in soups or stews, sliced or shredded. It freezes well, and it also makes really good pickles.
