I think everyone can identify with the concept of Frugal Friday. We had a very busy family of five, and Fridays were habitually “frugal” by default as we waited to deposit paychecks. I became quite adept at creating a complete (and usually delicious) meal out of the leftover bits in the refrigerator and a few always-on-hand pantry and freezer items.
The children have long been gone from the nest, but our Frugal Friday habit is still very real. Although these dishes cannot easily be repeated, I like to record some of them here, as a reminder of the combination of foods and the cooking methods that were the most successful. I apologize, but I cannot accurately provide measured amounts in these recipes. In truth, they are included here to inspire future creative endeavors!
