Creamy Cucumber Salad Dressing


There comes a time for me, during every cucumber growing season, where I cannot stand to look at another cucumber slice.  I honestly always enjoy the taste of cucumber, but those little white & green circles really annoy me after weeks and weeks of seeing them in everything I eat.

I found a few recipes on the internet for cucumber salad dressing, so I thought I would try one.  I am usually a committed oil & wine vinegar salad dressing person, but I actually enjoyed the taste of this dressing.  It was a nice, refreshing change!

Cucumber Salad Dressing

Ingredients

  • 2 cups peeled, chopped cucumber
  • small handful of celery tops & leaves
  • 1 small jalapeño
  • 2 cloves garlic
  • 1 tablespoon dried dill
  • 1 tablespoon lemon juice
  • 1 cup yogurt
  • 1 tablespoon olive oil
  • fresh mint, chopped
  • Kosher salt & freshly ground black pepper

I combined the cucumber, celery bits, jalapeño and garlic in the food processor and processed until smooth.  I then stirred in the lemon juice, yogurt and olive oil, then seasoned it with salt, pepper and the fresh mint.

This was a really nice dressing.  It stored well in a jar in the refrigerator; I think it actually improves with flavor as it ages.  I look forward to making it again! … but, next year, because I’m really sick to death of looking at cucumbers right now.
