Smoked Salmon and Cucumber Spread


I hosted a brunch meeting recently, and this was the perfect dish to round out the menu:

Mini Bagels with Smoked Salmon and Cucumber Spread
Deviled Eggs
Tomato Tartlets
Fresh Strawberries
White Wine and Grapefruit Spritzers

The recipe couldn’t be simpler, and was okay to make a day ahead!

Smoked Salmon and Cucumber Spread

ingredients

  • 8 oz package cream cheese, softened
  • 6 oz smoked salmon, flaked
  • 1/2 cup Greek yogurt
  • 1 large cucumber, peeled and grated
  • 3 scallions, whites and green, finely chopped
  • 1 tablespoon chopped fresh dill
  • 3 tablespoons lemon juice
  • Kosher salt & freshly ground black pepper

Beat cream cheese and smoked salmon together, using an electric mixer. Using a clean kitchen towel, squeeze excess moisture out of grated cucumber and add to the cream cheese and salmon mixture.  Stir in the remaining ingredients and season with salt and pepper.  Cover and refrigerate until serving.

I served this spread on mini bagel halves, prepared right before serving.


The White Wine and Grapefruit Spritzers were amazing!  They were so easy to prepare and very light and refreshing for a summer brunch.  I combined everything in a large, clear glass drink dispenser:

  • 1/2 gallon grapefruit juice, frozen (in an ice cube tray)
  • 1/2 gallon grapefruit juice, chilled
  • 1 bottle Pinot Grigio, chilled
  • 1 bottle club soda, chilled
  • a few sprigs of fresh rosemary

Delicious!!
